Cabernet Sauvignon is packaged perfectly. It has
small grapes closely clustered but jammed with age-preserving tannins.
Its skins are thick which hold deep colour-giving pigments. It is
extremely hardy and vigorous and more resistant to rot than most
reds. It responds best in well-drained loam or gravelly loam soils,
but it can thrive in very different conditions.
It is, however, a late ripener requiring warmth and time to develop.
If it has too much heat the flavours can display more jammy, stewed
notes. If it doesn't have enough time to ripen, it can taste herbaceous
and aggressive. But when it is ripe, it can reach unparalleled levels
of harmony and distinction.
Classic features of Cabernet Sauvignon are the
enduring scent of cassis, the taste of blackberry and violets, and,
when it gets a bit older, the combined mellowness of cigar-box,
cedar and leather. We have chosen 12 of the most common aromas encountered
in Cabernet Sauvignon. There are many others for you to discover;
all part of the attraction of this, the King of Wines.
The aromas in this kit are: Blackberry, Black Olive, Cassis,
Chocolate, Cigar Box, Coffee, Herbaceous, Leather, Mint/Eucalyptus,
Oak/Cedar, Smoaky/Toasty, Violets
We use a food-safe preservative in our aroma formulations to maximize their stability and shelf-life.
There still will be a slow deterioration in the quality of aromas over time; some more than others.
If the bottles are re-capped immediately after each time they are opened and stored away from excessive heat and light, then this process would normally be measured in years.
If stored/used incorrectly, then this will obviously happen more quickly.
We haven't yet put a 'definitive' shelf-life limit on our products because our own internal quality control checks are yet to detect an appreciable difference with time in the aroma quality! Also, we have had no consumer complaints or product returned due to concerns over premature loss of quality over time. Nonetheless, we are constantly striving to improve and expand our products. If an aroma does exhibit a loss of intensity, we will replace it.

"Wine Awakenings is a much needed education tool that will greatly assist the consumer in better understanding the not so subtle nuances in the art of wine sensory evaluation. Clearly articulated, easy to follow, affordable and can also add some fun to assist in 'verbalizing' the complicated science of wine" -signed- Donald Ziraldo, Inniskillin |
